Not Your Grandma's Food Truck


Back in the day, you probably stopped in at a “chip truck” at the side of the road once or twice. It was probably a hot day. Maybe you were heading to a cabin or camping. The sole purpose was to enjoy some salty fries slathered in ketchup.


Remember those mini wooden forks you used to use to dip into your fries? If you were lucky, the truck even offered gravy.


These days, food trucks are the topic of conversation among foodies and they are a far cry from the basic chip trucks of yore. In any major North American city, patrons can now experience a world food market because of this widespread trend.


When we step into a festival or even out the door of our office, we are spoiled with the accessibility and options of gourmet food being brought to us by food trucks. Today’s food truckers are really stepping up their game.


Patrons in many cities can access specialty food trucks that focus on doing one thing exceptionally well, such as lobster rolls, roti, gourmet hot dogs, or hot chicken.


The food truck market is now a competitive one where trucks need to set themselves apart. Old fashioned french fries with wooden sticks won’t necessarily meet the mark for these customers who are used to a plethora of culinary options. Chefs are looking to replace salted, deep fried potatoes with fondu tater tots. Or, old-school weiner dogs with pork belly poutine.  


Here are a few examples of food truckers who are embracing creativity to create one-of-a-kind culinary experiences. Patrons find the line-ups at these joints well worth the wait, so food truckers (and food trucker-wannabes) can find all sortsa’ motivation from their styles!


Grilled Cheeserie- Nashville, Tennessee

A few weeks back, we hit up New Year’s Eve in Nashville, Tennessee. Soulful music was around us and flavorful foods were everywhere.


Of all of the incredible food trucks that lined Broadway, one in particular caught our attention: The Grilled Cheeserie.


This truck prides itself on using locally sourced, seasonal ingredients to create fresh and creative takes on the traditional comfort food. And it shows.


The signature ‘Melt of the Moment’ is currently a french onion soup melt. Pair that with the fondue tater tots mentioned above and it’s a taste explosion.


The line-ups were consistently massive; it seemed like everyone east of the Mississippi River knew about the melt in your mouth goodness of The Grilled Cheeserie.


While The Grilled Cheeserie’s ‘Signature Melts’ menu is constantly changing, it also allows their patrons to vibe off their creativity and build their own gourmet grilled cheese using a variety of breads, cheeses, and toppings that include a Bleu Cheese Aioli or Smoked Jalapeno Relish.


Distinguished comfort food in Music City. It’s all kinds of awesome.


PD3 Street by Blake - Canmore, Alberta

Some foodies out there may be looking for a food truck crystal ball or compass to direct them to the most unique, exceptional dining experience on the market. In our opinion, you would definitely be pointed towards PD3 Street by Blake in Canmore, Alberta.


Picture this. You’re sitting atop a converted 1962 Leyland Titan PD3 double decker bus, over-looking the Rocky Mountains.  


This is the coolest food truck experience we can describe.


With two levels, PD3 Blake offers two totally different dining experiences.


The first is street food that is available from the take-out window.  So customers can grab a Pho.King taco, a side of Seoul fries, and a pint of Banff Avenue Brewing Co.’s “Pond Hockey Pale Ale” and enjoy the scenery on the licensed patio.


Or, patrons can take this experience to a whole new level. They can make a reservation to book a table on the second level and enjoy a full five course meal. That’s right - you just read food truck and five course meal in the same sentence.    


The Asian fusion cuisine meets all expectations created by the breathtaking scenery. Options include Mortadelle Panzanella, Haida Gwaii Scallop, and Smoked Bananas.


With this type of menu and that type of scenery, this is clearly not your Grandma’s Food Truck.
